So here is something new – Chai Masala Inspired Muffins! Perfectly spiced with the warm notes of chai, these muffins are a delicious treat for everyone. 🧁

Chai Masala Inspired Muffins Recipe (Makes 12 muffins)

Ingredients:

1 ¾ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground ginger

½ tsp ground cardamom

¼ tsp ground cloves

¼ tsp ground nutmeg

¾ cup granulated sugar

½ cup unsalted butter, melted and cooled/ can be substituted with greek yoghurt (or coconut oil for a vegan option)

1 cup milk (or plant-based milk)

1 tsp vanilla extract

2 tsp black tea leaves (optional for extra chai flavor)

¼ cup unsweetened applesauce or mashed banana, or 2 tbsp ground flaxseed mixed with 5 tbsp water (let sit for 5 minutes)

Instructions:

1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.

2. Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cardamom, cloves, nutmeg, and sugar.

3. Prepare the wet ingredients: In a separate bowl, whisk together the melted butter/greek yoghurt (or oil), milk, vanilla extract, and your chosen egg substitute (applesauce, banana, or flaxseed mixture). If you want a stronger chai flavor, you can steep the black tea leaves in warm milk for 5-10 minutes and strain before adding it to the wet mixture.

4. Combine wet and dry ingredients: Slowly pour the wet ingredients into the dry ingredients, gently folding the mixture with a spatula. Be careful not to overmix; the batter should be slightly lumpy. For the topping you can add sliced almond.

5. Scoop the batter: Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.

6. Bake: Place the muffins in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool: Let the muffins cool in the pan for 5 minutes.
